I couldn’t think of anything either. So why not put these two amazing flavors together into one lip smackin’, finger lickin’ dish? That is exactly what I did.

Ingredients for Pork Rind Fried Chicken

1 bag Southern Recipe Small Batch Cilantro Lime Pork Rinds

2 lbs of Chicken thighs (I like chicken thighs, but you can use your favorite chicken)

2 eggs

2 Tablespoons of butter

Salt and pepper for the chicken

Take the entire bag ofSouthern Recipe Small Batch Cilantro Lime Pork Rinds and crush them. I put them in a plastic bag and got out a little frustration smashing them to bits. You can also use a blender to crush them up. Heat the oven to 400°.

Place two tablespoons of butter in a 13 X 9 inch glass dish and melt in the oven. Once melted remove to place the chicken in the dish.

Sprinkle salt and pepper on both sides to season the chicken.

Next dip the chicken in the egg then let it sit in the crushed pork rinds to completely covered on each side. This is what gives it the flavor. I even sprinkled a little more of the left over crushed pork rinds on top.

Place the chicken in the dish as it is coated. Bake for 15 min then flip and back for 15 minutes on the other side.

Then remove and serve with your favorite pork rinds!

This is great, since you can make a large batch and there is always enough for leftovers. They were even better the next day. I like being able to cook a large batch, so we can have two meals with one dish. Our secret is to warm up the chicken on medium low heat in a cast iron skillet the next day. This way the fried chicken stays crunchy.After warming up the chicken cut it and use it in salads, tacos or make chicken Parmesan the next day.

Yes you can. What I love about this pork rind fried chicken is you can use different flavors of pork rinds to make different flavors of chicken. Find a store near you that sells Southern Recipe Small Batch, since they have so many unique flavors. You will want to try them all. If you are on the Keto diet you don’t need to give up fried chicken. You can now have pork rind fried chicken in any flavor you want.

      Great question Barry. The chicken is crisp, since it is baked in the oven. The oven dries any moisture that may come out of the chicken. We really liked this when we were on Keto.

      Great question. Yes you can use what ever type of chicken you have on hand. Yes you can use the air fryer. I don’t have the temps and length of time for that right now.
