I just adored Grandma's peanut butter cookies as a child, and still do. Now they're a favorite of my own daughter's, too. Some classics just stay classics for a reason - Because they're just plain good.

This idea came to me one day when I was baking up a batch ofGrandma's beautiful & tastyold-fashioned Peanut Butter Cookies.

The cookies had come out of the oven, and had cooled on the rack.

And then I thought - Oh, chocolate and peanut butter are so good together. So, why not dip half of each cookie in dark chocolate?

Turns out, that was a beautiful thought.

Because when dipped in chocolate, Grandma's peanut butter cookies taste even more amazing than the original.

Dipping "standard" cookies in some chocolate ... dark, milk, or white ... is a really easy way to elevate pretty much any cookie and add a fun and elegant flair. Simply melt some chocolate in a saucepan or the microwave, dip half of each cookie, and set aside on waxed paper to set. Quick and easy!

For an even tastier {and prettier} cookie, I gave each one a little sprinkling of sea salt and coarsely chopped roasted peanuts, too.

Salted Dark Chocolate Dipped Peanut Butter Cookies

Give "regular" peanut butter cookies an easy, elegant and amazingly tasty flair with a dunk in chocolate and a sprinkling of sea salt.

ingredients:

  • 1 c. unsalted butter, softened
  • 1 tsp. vanilla extract
  • 1 c. light brown sugar
  • 1 c. granulated sugar
  • 2 eggs
  • 1 c. peanut butter
  • 3 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/8 tsp. salt
  • 1 (12 oz.) package Ghirardelli dark melting wafers {or other dark chocolate for dipping}
  • about 1/3 c. coarsely chopped dry-roasted peanuts
  • fleur de sel or sea salt {optional}

instructions:

  1. Place butter and vanilla in a mixing bowl; beat with an electric mixer at medium speed until fluffy, about 2 minutes. While continuing to beat, gradually add brown sugar and granulated sugar; beat until well combined.
  2. Add eggs, one at a time, beating after each addition until incorporated. Add peanut butter and beat until combined.
  3. Add flour, baking powder, and salt; mix on low speed until just combined.
  4. Roll dough into 1-inch balls; place on a cookie sheet. Flatten with a fork dipped in granulated sugar; repeat with the fork turned perpendicular to the first marks to create a cross-hatch pattern.
  5. Bake at 375℉ for about 9 minutes, or until very lightly browned. Cool completely on a wire rack.
  6. Melt dark chocolate melting wafers in a small bowl according to package directions. Dip half of a cookie in chocolate; gently shake to allow excess chocolate to drip off back into the bowl. Place cookie on waxed paper and immediately sprinkle with chopped peanuts and a small sprinkling of salt. Repeat with remaining cookies.
  7. Allow to stand until chocolate sets.
